Cook basmati rice as you normally do . In a pan take ghee, add jeera and then chopped onions. Sauté for - mins . Add chopped garlic, sauté for - mins. Optional - add green chilli if you like. . Add chopped tomatoes and sauté for - mins. . Add palak purée, salt to taste, some red chilli flakes and very little garam masala or jeera powder if you like. (I only used salt and chilli flakes). . Add very little water and cover the pan to let it cook for - mins, stir in between. . Add the cooked rice and mix. . Eat with raita :) Optional: - you can also add more veggies like shredded carrots or gobhi florets or peas while sautéing. - some people also like to add bayleaf/pepper for added flavour. - you can also make it more protein heavy by adding shredded paneer or soya chunks Feel free to innovate and add per your taste and diet plan :) For spinach purée: . Wash and chop the spinach . Blanche it in boiling water for mins . Drain water and add the blanched spinach to ice cold water for - mins . Drain water and blend the spinach with very little water in a mixer
