Red lentils- 60gm
Oil - 5gm
Onion - 30gm
Tomatoes- 100gm
Spinach- 150gm
Green garlic- 5gm
Spices - red chilly powder, turmeric powder, coriander powder, cumin powder, garam masala, dried fenugreek leaves, black pepper powder and salt.
Wash and boil the red lentils adding two cups of water and a tsp of salt until it’s soft.
In a wok, add a piece of cardamom, cloves, bay leaf and cinnamon stick along with oil and heat it until they start crackle.
Now add chopped onion and garlic and ginger paste until the rawness disappears. Thereafter, add chopped tomatoes and all spices and continue scrapping it until it leaves oil on a medium high flame.
Now, add chopped spinach and water and cook it until it wilts. Bring in boiled red lentils and add water if needed. Cook it on the low flame until all spices incorporates covering the lid.
Enjoy with chapati or rice as you like. You may garnish it with garlic greens and sesame seeds if you like.
