150g mushrooms 100g bell peppers 100g spinach 75g Greek yogurt 75g high-protein pasta 10g oil

Method

Step 1

Boil water and cook the pasta until perfectly al dente. .Heat oil in a pan, add bell peppers, and roast until they're just tender. .Introduce the star of the show - mushrooms! Season with salt, pepper, and a dash of chili powder. Cook until the mushrooms are tender, taking care not to overcook. . Turn off the stove and let it cool. Once cooled, add Greek yogurt, oregano, salt, chili flakes, and any other seasonings of your choice. Mix well for a creamy and tangy base. .Switch the stove back on and add the cooked pasta to the mushroom mixture. Keep the flame low and stir for - minutes, allowing the flavors to meld.
