Vanilla whey protein 2 scoop
Coconut milk 250ml
Raspberry 150g
Lemon zest
Lemon juice
Agar Agar 9g
Sweetener
Water 100ml
First make up your protein shake by adding the coconut milk, water, and Whey Protein to a shaker and shaking well for a smooth, lump-free liquid.
Pour into a bowl and then add lemon zest, lemon juice and agar agar, leave for a few minutes before mixing,
Strain through a sieve transfer the mixture into a pan making sure there’s no lumps, gently warm up the liquid, being careful not to let it reach boiling point.
Pour into ramekins and place in the fridge to chill for a minimum of hours or overnight.
Add the raspberries, sweetener and water to a saucepan, bring to a simmer. Cook for minutes until the berries start to break down. Transfer to a blender and blend until smooth. Strain through a sieve into a container with a lid and refrigerate until chilled.
Once the panna cotta is set, dip the bowls in hot water to help loosen, then run a knife around the edge. Put the mold upside down on a plate and release the panna cotta. Serve with fresh raspberries and the raspberry sauce.
