Just take bell peppers, onions, mushrooms …. well, that’s what I had sitting in my fridge and chicken marinated with soy sauce, vinegar, pepper n salt. Stir fry ‘em all with minced garlic, ginger juliennes until cooked. Now add some more soy sauce, tomato paste, corn flour slurry ( a wee bit) and let it all mix together. Garnish with cilantro leaves.
