For the village salad:
Tomato, cut into wedges: 500 gm
Cucumber, sliced: 200 gm
Green pepper, cubed: 150 gm
Red pepper, cubed: 150 gm
Onion, thinly sliced: 15 gm
Olive, pitted: 90 gm
Feta cheese, cut into chunks: 170 gm
For the greek dressing:
Olive oil: 30 ml
Red wine vinegar: 15 ml
Lemon juice: 30 ml
Dried oregano: 1 gm
Garlic clove, grated or minced: 2 pieces
Salt: 3 gm
In a small bowl or jar, add all of the dressing ingredients and whisk to combine.
In a large bowl, add all of the sliced vegetables; tomatoes, cucumber, bell peppers, red onion and olive.
Cover the vegetables with the dressing and toss until everything is well-coated and top with slices of feta cheese.
This salad can be served immediately or stored in the fridge for up to days.
