Oil - 5 gm ( I used coconut oil) Finally chopped Tomatoes - 200 gm Onion - 200 gm Garlic - 4-5cloves Red bell pepper - 70 gm Egg - 3 medium Spices Cumin - 2 tsp Smoked paprika - 1 tsp Cayenne pepper/ chilli powder - 1 tsp Ground black pepper - 1 tsp Salt to taste Herbs Coriander Parsley Sweet basil
- To a hot pan with oil add onion and sauté it till translucent - add red bell pepper or any other veggies and sauté for min or until soft. - add garlic and let the veggies pick the garlic flavour for mins - add salt, paprika, chilli powder and cumin powder and sit for min - add the chopped or peeled tomatoes and gently press the tomatoes down with a spoon. Add water if required - let the mix come to a boil on medium flame. - add pepper powder - once the consistency is thick, make small holes in the mix with the back of the ladle and drop the egg in - cover the pan and let it sit in medium until the egg is steam cooked. - garnish with the herbs Serve with a slice of toasted bread or a roti
