2 tbps butter
1 tbps oil
1 kg sliced onion
150 ml white wine
1 tbps all purpose flour
1 ltr brown stock
1 rosemary sprig
1 thyme sprig
Salt as per taste
4 slice bread loaf
1/2 cup grated cheddar
1/2 cup grated mozzarella
1 tbps black pepper powder
Put a heavy bottomed pan on stove and add butter and oil to it to melt
Once done, add salt and onions to it and let them caramelize for around minutes. Keep stirring so the onions don't stick to the bottom
Now add wine and flour and mix well. Let it cook for a couple of minutes
Add stock, thyme and rosemary and let it simmer for another minutes
Season with salt and pepper and mix
Once done, pour the soup into individual bowls.
Toast bread and add it to each bowl
Add cheeses to the bowl
Preheat oven to and place bowls for minutes
Time to serve hot
