Banana (sweet & ripe) - 1 big sized
Zero fat butter (the one i used had 5gm fat per 25g) - 25g
egg - 1 no.
stevia - 2g
All purpose flour - 70gm (one can try using wholemeal options)
whey - 1 scoop
walnut - 8gm
baking powder - 0.5 tsp
cinnamon/cardamom powder - 0.5tsp (optional)
Honey - 1tsp (optional, used just for garnishing purpose)
blueberries and celery leaves (used just for garnishing purposes and not part of the ingredients)
peel the banana, mash with a fork in a big bowl
add butter and egg and mix well (use an egg beater)
mix all dry ingredients (flour, stevia, whey, baking powder) in a separate bowl and add them to the above mixture.
blend using a spatula until uniformly mixed.
chop walnuts into small pieces and add to this mixture.
grease the baking accessory of the air fryer with the remaining butter in the container that was used to store the butter.
pour the mixture into the greased container.
set the device at °C for a duration of minutes.
Check once in between to ensure the baking is done properly.
After turning off, check with a toothpick if done, and when done, carefully let it cool, covered with a muslin cloth.
Serve with a low calorie garnishing and enjoy the healthier meal for the breakfast or a snack.
Disclaimer: baking time may vary according to individual brands of air fryers and the wattage in different regions, so it's always better to have a periodic check while baking and to pull it out at the right time.
