500 gms round Eggplant 50 gms pomegrante seeds 10 gms maple syrup 1/2 tsp red chilli powder 25 gms coriander leaves chopped 30 gms tahini 10 gms olive oil 15 ml water 5 ml vinegar
Cut eggplant in round inch thick slices. . Mix chilli powder, salt, olive oil and brush it on the eggplant slices. .Preheat a tawa on medium flame , put eggplant slices on it.Cook from both the sides, make sure they don't burn. . Mix tahini, maple syrup, water, vinegar. . Take out slice on a serving dish, top it with tahini sauce , salt, pomegrante seeds and serve.
