Cauliflower-200 g ( shredded / riced using string vegetable chopper or grated)
Curd - 100 g
Ghee/ oil -3 grams
Curry leaves
Mustard seeds -1/2 tsp
Cumin seeds -1/2 tsp
Asafoetida-1 pinch
Salt
Black gram dal ( urad daal ) -1/2 tsp
Dry chillies
Shredded cucumber/ carrot/ pomegranate- optional )
Fenugreek seeds -1 pinch (optional )
Clean and finely chop cauliflower florets using vegetable chopper or grinder on pulse mode
Heat ghee in nonstick pan and add tadka of mustard seeds , cumin seeds, curry leaves, chilli, asafoetida, urad daal , fenugreek seeds
When it is spluttering add cauliflower and salt and sauté for few minutes, it should remain crisp and do not over cook cauliflower,
Add curd and turn off heat Garnish with your favourite vegetables like finely chopped cucumber, carrot, coriander leaves or pomegranate (optional) It tastes good anyways even without adding any of above mentioned ingredients too !!
