Grate the cheese. Thinly slice the tomato and onion. Use a peeler to create long cucumber ribbons.
On one slice of bread, layer in this order: First, a layer of chopped or sliced onions Then tomato slices Finally, top with grated cheese Sprinkle salt, pepper, and seasoning if using. Cover with the second slice of bread. Gently press down.
Carefully wrap the sandwich with cucumber ribbons — across the middle or fully wrapped. It adds crunch and a stunning fresh look.
Slice the sandwich neatly into halves. Chill for – minutes if you like it cool and crisp. You can add green chillies if like it spicy. Serve with mint dip on the side.
