Winter is season for fresh vegetables....i love the red carrots, sweet poatatoes and leafy vegetable of the season. This is my attempt to creat a healty snack to eat sqeet potato without the guilt. Mix all ingredients in bowl add seasoning of choice. squeeze in Vit C toss and eat Cucumber and carrots provide the salad with crunch Sweet potato gives it creamy texture chicken for protien Vegetarians can add soya chunks or paneer instead of chicken.
