Chicken thigh - 250g
Chicken breast - 250g
Onion- 70g
Tomatoes- 100g
Ghee/oil - 10g
Curd - 100g
Ketchup/tomato sauce - 2tbsp
Watermelon seeds - 5g
Cashews- 5g
Whole spices- cardamom, cloves, bay leaf, cinnamon stick
Powdered spices- 0.5 tsp(turmeric powder, coriander powder, cinnamon powder, nutmeg powder) 1tsp(cumin powder, black pepper powder, mixed herbs, dried fenugreek leaves, ginger powder, garlic powder) 3tsp (red chilly powder)
Cut onion and tomatoes into chunks and boil it in a pot adding water until it turns soft and let it cool down for sometime.
Meanwhile, marinate the chicken with all spices, curd and lemon juice and let it sit for about minutes (or refrigerate overnight).
Make the paste out of boiled tomatoes and onion. In a pan, add ghee and all whole spices and let it splatter until it leaves the aroma. Thereafter, add the onion-tomato paste and saute it until it leaves oil or for about - minutes.
Throw in chicken and cover the pan with lid until the chicken is / cook through. Add the cashew-watermelon paste, ketchup and let it simmer until the chicken is completely done.
Sprinkle more fenugreek leaves on top and pair it with chapati/bread/naan/rice as per your choice.
