50 Gms - Spaghetti (take as per your macro) 150 gms - Chicken (portioned and marinated ahead) 5-7 no. - Cherry tomatoes 100-150gms - mushroom (take as per your macros. You can also take half mushrooms and half of rainbow vegetable like bell peppers, broccoli, zucchini etc) 10 gms - ghee / butter (as per macro) 10 no. - peeling and finely chopped garlic 60ml - coconut milk Italian seasoning and salt to taste Optional: Fresh aromats like basil / mint / oregano (but good to have)
- Take a pot of water, add salt and being the water to a boil - Add the spaghetti and let it cook for about minutes or until cooked Al dente (cooked, but yet firm to bite) - in the meanwhile in another pan, take gms oil / ghee / butter, and sauté the garlic till golden brown. To this add mushroom (and veggies) along with cherry tomatoes and sauté on high heat. Cook for approx minutes. Keep it aside. Now take the other gms of oil and stir fry the chicken till partially done. Avoid overcooking the chicken, else it will become rubbery and dry. In the stir fried chicken, add back the veggies and add the coconut milk and the Italian seasoning. Adjust salt and garnish with chilli flakes and aromats. Cook for seconds and your yummy chicken in coconut milk is ready.
