Eggs- 4
Oats- 60g
Protein powder (unflavoured)- 70gm(2 scoops)
Milk low fat- 100ml
Baking powder/baking soda- 1 tsp
Nutmeg powder- 0.5 tsp
Cranberry dried- 15gm
Yogurt/curd- 200gm
Butter -5gm
Vanilla essence- 1tsp
Zero calorie sweetener- as per the taste
Grind oats along with nutmeg powder and baking powder and keep it aside.
In a bowl, whisk eggs until it’s foamy, add vanilla essence and milk and whisk again until all is mixed well.
Mix oats powder and protein powder in a bowl and then add this to the liquid mixture obtained above.
Mix using cut and fold method until everything is corporated. Add gm berries to it along with sweetener and let it sit for minutes.
Now, brush the nonstick pan with butter and laddle the batter in ,, portion and let it cook until it’s golden brown, then flip it and let it cook on other side as well. Make the pancakes repeating the same steps.
Now, in a bowl, add protein powder (another scoop), and add yogurt/curd along with sweetener. Whisk it nicely until it’s creamy and refrigerate it for - minutes until it’s set. Note: if using curd, make sure it’s not sour
Now, spread the yogurt mixture on each pancake and stack one over the other. Drizzle the remaining mixture on top and add remaining cranberries for garnishing. Enjoy your Sunday. 😋🫶
