80ml Coconut Milk 25 gms Boneless chicken cubed 100gm mixed veggies - color bell peppers, sweet corn carrot etc 1tsp tumeric Thai Paste Wet grind_ Handful coriander leaves,mint leaves,lemon grass,rosemary, basil leaves, 2 green chillies,3_4pcs garlic, half inch ginger into fine Paste.
In a non stick Pan, saute the Thai Paste along with cubed chicken tumeric and salt. . add little water so that paste doesn't burn
once chicken is half done add the veggies and cook with lid cover for mins.
Imp Step: *switch off gas then add coconut milk.* stir once and close lid for flavors to infuse together. serve hot.
PS: I have made this in my claypot for my family of but can easily be made for single portion.
