For the Salad: lettuce / cabbage broccoli 🥦 sweet corn 🌽 carrot 🥕 onion 🌰 Mashroom garlic spnich 🍃 bell pepper 🫑 paneer 100gm Croutons – (toasted whole wheat/multigrain bread cubes 2 bread) Amul cheese cube – 1 to 2( grated) ghee or olive oil - 5gm For the Eggless Dressing: Greek yogurt or hung curd – 10gm – 2 tbsp honey- 10gm Garlic – 1 clove (finely minced with salt or grated) Salt – to taste Black pepper – to taste oregano- to taste chilli 🌶 flakes- to taste
🥣 Instructions: . Make the Dressing: In a small bowl, whisk together yogurt, honey, garlic,chillies flakes, oregano. Slowly whisk until smooth and creamy. Add salt and pepper to taste. . Assemble the Salad: Boil broccoli, spinach, and corn together with a little salt. In a pan, heat some olive oil or ghee. Once hot, add chopped garlic and onion and sauté until translucent. Then add mushrooms and cook until they turn soft and release their water. Next, add carrots, bell peppers, and the boiled vegetables (broccoli, spinach, and corn). Season with salt and black pepper, and sauté everything for about minutes. Switch off the flame. Transfer all the sautéed vegetables to a large bowl and mix well. Drizzle the dressing over and toss well to coat evenly. Top with croutons and extra cheese shavings. .
