Broccoli: 120gms (diced)
Onion: ½ piece (chopped)
Carrot: 30 gms (chopped)
Butter: 15 gms
All-purpose flour: 10 gms
Vegetable broth/stock: 200 ml
Milk: 150ml
Black pepper powder: to taste
Salt: to taste
Melt butter in a heavy medium pot over medium-high heat.
Add all the veggies (broccoli, carrot and onion) to the pot along with salt and pepper and sauté for - mins (until onion is translucent).
Add in the flour and for a minute, until the flour reaches a blonde colour. Now put in the vegetable stock and bring it to boil.
Simmer everything uncovered until broccoli is tender (takes about - mins). At this point, add in the milk.
With a help on an immersion blender puree the soup. (Other alternative is to bring the mixture to room temperature and blend it in a blender until smooth. Later transfer everything to a non-stick pot and bring to a boil.)
At this point check the seasoning (salt and pepper) and adjust it as required.
Transfer it to a bowl and serve with homemade croutons/ stick garlic bread (optional).
NOTE: Please adjust the amount of milk/stock as per your preferable consistency of the soup. ENJOY!!
