1 medium sweet potato, peeled and cubed
1 tbsp olive oil
Salt and pepper to taste
1/2 cup cooked quinoa
1/2 cup canned black beans, drained and rinsed
1/2 cup cooked corn
1/2 cup chopped cherry tomatoes
1/4 cup chopped red onion
1/4 cup chopped fresh cilantro
1 tbsp lime juice
1/4 tsp ground cumin
Preheat oven to degrees F ( degrees C).
Toss the cubed sweet potato with the olive oil, salt, and pepper. Spread in a single layer on a baking sheet and roast in the preheated oven for - minutes, until tender and lightly browned.
In a large bowl, combine the cooked quinoa, black beans, corn, cherry tomatoes, red onion, and cilantro.
In a small bowl, whisk together the lime juice, cumin, salt, and pepper. Pour the dressing over the quinoa and bean mixture and toss to combine.
Divide the quinoa and bean mixture into bowls. Top each bowl with the roasted sweet potato.
