Carrots, finely grated: 90 gm
Juice of orange: 40 ml
Vanilla extract: 5 gm
Olive oil: 25 ml
Honey, liquefied in microwave (30 seconds): 170 gm
Pineapple, drained, crushed or chopped: 60 gm
All purpose flour: 60 gm
Whole-wheat pastry flour: 70 gm
Baking soda: 5 gm
Cinnamon: 1 gm
Ground all-spice mix: 1 gm
Walnuts, chopped: 35 gm
Preheat oven to ubF.
In a mixing bowl, stir together the carrots, orange juice, vanilla, olive oil, honey, and pineapple until well blended.
In another bowl, stir together the flours, baking soda, and spices. Mix in the walnuts.
Blend the dry ingredients into the carrot mixture, stirring until just mixed.
Pour the batter into a non-stick -inch-square baking pan and bake for - minutes until a knife inserted in the center comes out clean.
Remove from oven, let cool slightly, and remove from pan.
