Chicken breast - 120g
Spinach- 200g
Cheese - 10g
Oil -2g
Pasta - 50g
Ginger- 10g
Garlic- 10g
Chilly -10g
Mayonnaise low fat - 15g
Lime juice - 1 tbsp
Spices: black pepper powder, oregano, mixed herbs, salt
Marinate the chicken with ginger garlic and chilli paste and lime juice and all the spices and marinate for about minutes or overnight
Chop the spinach into chunks and blanch it. Blanching: Add - cups of water in a large saucepan and bring it to boil, then switch off the flame and add spinach to it. Let it be in the water until it wilts and turn dark green. Thereafter, drain out the excess water and add spinach to cold water. Then make a puree by grinding it in the mixture. You can store this in the freezer as well.
Bring water to boil in another saucepan and add pasta to it along with salt. Let it cook until itβs half done and retain this pasta water.
Now, in a pan, add chopped garlic and oil and saute it until it turns translucent then bring in the marinated chicken and cook it until itβs golden brown.
Add spinach puree followed by pasta and pasta water. Let it cook for about - minutes or until the water drains. Not add too much water or else spinach would lose its green color.
Before serving, add grated cheese and mayonnaise and mix all well. Tada! Relish this greenie spinach pasta. π ππ
