- 50 grams of rice - 50 grams of soya chunks - 10 grams of ghee - 100 grams of curd - 1 medium-sized onion - 100 grams of spinach - Salt to taste - 2 green chillies - 1 clove, 1 bay leaf, 1 cardamom, 1 inch of cinnamon, 1/2 teaspoon jeera
- wash the rice and keep it soaked in water until used in the recipe - boil half a litre of water and add soya chunks to it. let it boil for minutes and then stay in the water for another minutes(we'll use them soon) - Add ghee to the pan or cooker and all the spices to it - Once the spices start spreading their aroma, add chopped onion, and green chillies slit into two to it. - once the onions turn brown, add curd to this and whisk it fast until it turns to a fine gravy. - Now squeeze water out of the soaked soya chunks, and add them to this gravy along with the spinach - cook the mixture for minutes with salt added to it as per your taste - add the soaked rice and gently mix it. - now add water to measure (if the rice comes to a cup, then just add /th of water to the pulao to cook) - check the salt and keep a lid on the pan or cooker; keep it on a low medium flame and let it cook until the rice is soft or you get whistle from the cooker. - Turn off the flame and let it rest for another minutes Your Soya Spinach Pulao is ready to eat and relish with some Raita or as it is.
