Wash soya granules of - times then soak soya it for to minutes. Put it in a dry and clean cloth and squeeze out the water as much as you can. Take a wok put the soya granules add yogurt, salt, coriander powder and red chili powder, sauté till it’s completely dry. Keep this aside
In a thick bottom pan ghee, ginger, green chili, onion salt to taste, red chili powder, turmeric powder and coriander powder and sauté. Add tomato with little water and cook on medium flame. Add kasoori methi and mix well. (Remove one tablespoon spoon of masal and keep aside). In rest of the masala put chopped cashew and sauté for few minutes. Once it cools down put the masala grinder add water and make a paste. Put this paste back into a pan and cook for few minutes. Add water if needed.
To make kofta in a bowl put soya granules mixture, gravy (which you kept aside), coriander leaves, bread crumbs and salt as required and mix everything together like a dough. Divide equal portion of the mixture make round balls. Put in air fryer for to minutes at degree.
Take a soup plate or a bowl put the gravy, then put the kofta and garnish with cream, julienne ginger and coriander leaves. Serve with roti or rice.
