Ingredients for refried Soyabean Quesadilla
- › whole wheat flour: 50g
- › soyabean : 30g
- › cheese slice: 1
- › ghee: 10g
- › Garlic paste : 1tsp
- › zucchini: 100g
- › Salad leaves
Method
1. 1. Soak soya bean dal overnight. Pressure cook for 10 mins high and 30mins slow. Drain the water and mash it with 1 tsp garlic paste.
2. 2. Make dough with whole wheat flour and make 2 chapattis, keep aside.
3. 3. Cook the soyabean paste in a pan till it comes together - this is your refuted beans part
4. 4. Cook zucchini rounds with 5g ghee on a tawa/ pan, flip and cook both sides till they sear
5. 5. To assemble, in each chapati put 1/2 cheese slice and refried beans and fold into half.
6. 6. Cook it on tawa using balance 5g ghee till cheese melts. You may use a cover to speed up the process. Flip and cook both sides.
7. 7. Cut into quarters and serve with zucchini and salad leaves
