Ingredients for Potstickers
- › Wheat flour: 60 gm
- › Defatted soya flour: 30 gm
- › Salt & pepper: To taste
- › Paneer: 20 gm
- › Veggies: 275-300 gm
- › Oil: 10 ml
- › Coriander leaves: Handful
- › Ginger: 1/2 tsp
- › Garlic: 1/2 tsp
- › Green chilli: 1/2-1 pieces
Method
1. 1. Boil water (should be bubbling) in a kadhai, add two pinches of salt and switch off the flame.
2. 2. Add in the measured flours and mix well.
3. 3. Transfer to plate and knead it for 5 minutes (it will be a little hot but will cool and be manageable in a minute). You can use plastic wrap to help while kneading if it feels too hot.
4. 4. Cover and keep aside for about 30 minutes.
5. 5. While the dough is resting, prepare the filling. In a chopper, mince around 100 grams of cabbage, 50 grams of carrot, 30 grams of boiled sweet corn, 20 grams of paneer, 30 grams of green beans, 1/2 tsp ginger, 1/2 tsp grated garlic, 2 tbsp, chopped coriander, 1/2 green chilli, along with salt and pepper. You can add any filling of your choice.
6. 6. Divide the dough into 10-12 grams portions and roll each using dry flour. It should be thin.
7. 7. Heat 10 grams of oil in a non-stick pan, place the dumplings and then pour about 1/4 cup water and cover it.
8. 8. Cook for about 5 to 6 minutes and then uncover and let the water evaporate and let the crust of the dumpling become golden brown.
9. 9. Serve hot with sauce of your choice (that fits in your macros) or enjoy them on their own.
