Fry panner with gms of coconut oil for - minutes then take only panner out without oil from the pan and keep it aside. Add onion to same pan and fry for - minutes and add tomato cook for minutes. Boil brinjal and palak before and add it to the pan once cooked . later add a pinch of tumeric powder, chill powder and salt as per taste. once completed add the cooked rice and mix it well.
