Kaju - 100 gms
Whey - 50 gms
Water - 100 ml
Elaichi powder
Grind kaju in grinder in pulse mode to a fine powder. don't over do as it will make kaju paste and we don't need paste we need fine powder
To a pan add water and once it starts boiling add kaju powder
Keep stirring continuously and cook over low heat
Once the water evaporates and kaju paste starts to leave pan sides add elaichi powder and whey
If the mixture is too dry add little water and cook for just a minute or two.
switch off the flame let the mixture cool down a bit so that you can handle it
knead the dough a little and then on a flat surface place butter paper and keep the dough over it place another butter paper over it and roll it with rolling pin lightly
roll as per thickness of barfi is required
Once the barfi cools down cut it into diamond shape pieces
