Medium sized Eggplant-1
Garlic cloves 8-9
Green chilly 4-5
Ginger 1/2 inch
Onion 2 ( medium sized)
Fresh coriander
Oil 5 ml
Curry leaves
Red chilly powder, turmeric powder , garam masala salt
Wash eggplant( बैगन) and brush little bit oil on outer surface of it.
Roast it on gas ( keep it on direct flame on gas)on medium flame
Allow eggplant to roast over flame -min giving it a quarter every - min as it cooks
Larger the eggplant longer it will make to roast
Make sure the skin of Baigan get charred from all side
Once it is cooked switch off the gas and keep it in dish... mash it ( I liked the burnt skin of eggplant so I didn’t remove it)
Add remaining oil in kadhai
Add onion and roast it till golden brown
Then add garlic green chilly and ginger( crushed all in mortar unevenly) this is called Thecha actually which give more flavor to Receipe. Add green chilly more if u like more spicy
Add remaining masala and salt
Mash the eggplant with hands and add it in kadhai
Mix thoroughly all the mixture .
Keep it on low flame with lid on kadhai for next min
Now it is ready to serve with coriander on top
U can add roasted and crushed peanuts also
It is eaten with Bhakari /Roti/ chapati
