Ingredients

Besan/chickpea flour -132 gm(1 cup)

Oil -12gm (7gm goes in batter + 5gm tadka)

Rava/Semolina -37gm(3tsp)

Eno- 3/4th tsp

Baking soda - 1/4th tsp

Lemon Juice -2 tsp

Sugar -12gm(1tsp ,optional)

Water -1cup

Salt, haldi(turmeric), Rai(mustard seeds) ,ginger paste,green chilli(if you wish to you can add).

Method

Step 1

Procedure :- . Sieve all together (Besan+rava+salt+haldi+soda) in a bowl. . Add tsp lemon juice & tsp oil(gm). Mix well. . Add water gradually till flowy consistency (maybe as thick as condensed milk) and lumps are gone. . Keep the batter aside for mins. . Keep the steamer ready for mins, grease the tin. . Add eno to the batter. Pour it in tin and put in steamer for mins. . Meanwhile prepare the tadka , heat some oil(I took gms) in kadai(wok) , add Rai,let it splutter then add curry leaves ,green chilli ,cook for few secs. Add half cup water to it. Add tsp lemon juice ,tsp sugar(optional or as per your preference) ,let it dissolve . Turn off the flame. And let it cool. . Once the dhokla comes out , demould/flip it in a plate. Let it cool. Make slices and then pour the tadka over it. And serve with chutney or tomato ketchup.
