Ingredients for Chicken gravy
- › Chicken (Cooked 1 kg for 4 days)
- › Mustard oil 15 gm
- › Ginger, garlic, green chilli paste
- › Kasuri methi dry roasted
- › Cumin seeds roasted and powdered
- › Coriander seeds roasted and powdered
- › Onion, tomato roughly chopped (two each)
- › Fresh Coriander leaves with roots
- › Whole spices for tempering the oil are big black elaichi (one piece), small green elaichi (2 PC), cloves ( 5 PC), whole black pepper balls, whole cumin seeds, bay leaf one.
- › For marination of chicken (preferably overnight). I used ginger garlic chilli paste, salt, turmeric and red chilli powder, squeezed lime juice.
1. I made it in a 'Bhagona' and the steps are exactly done to ensure its worth the effort. elaborate steps (and washing thereafter ). But must try if you are looking for that different "like never before " chicken gravy. Method: Flash fry the chicken in the hot oil/ghee. As shown in the picture. Just gently place the marinated chicken in the hot oil and remove. This is the first trick. Chicken was marinated with ginger garlic paste, turmeric, salt and lemon and kept for at least 1 hour or more. Whole spices for tempering the oil are big black elaichi (one piece), small green elaichi (2 PC), cloves ( 5 PC), whole black pepper balls, whole cumin seeds, bay leaf one. In the same oil add badi elaichi, small elaichi, bayleaf, cloves, peppercorns cook the chopped onion, tomato, ginger, garlic, coriander leaves covered till they become soft and mushy. Once they cool a bit blend them in a mixie jar with a little water. Again add ghee in the washed bhagona followed by kashmiri chili. Pour in the contents of the mixie jar and add turmeric powder, cumin powder, kasuri methi powder, gar am masala. let it simmer. Add the flash fried chicken pieces. Keep it covered and let it simmer for 20 minutes. Serve with rice.
