Pie Filling: 5 gm olive oil 50 gm onion 2 cloves garlic salt, to taste 50 gm soya granules 150 gram water/ vegetable stock 100gm chopped vegetables( any) 50 gm tomato 10 gm potato flour/ corn flour/ tapioca flour 1/2 tsp dried herbs of choice( optional) 1tsp soy sauce 1 tsp chilli powder A few sprinkles ground pepper Potato Mash Topping: 120 gm potato(boiled) 20ml milk 5gm olive oil 1 /2 teaspoon garlic ¼ teaspoon Himalayan/sea salt A few sprinkles ground pepper A sprinkle Italian herb seasoning A sprinkle chilli powder
FOR PIE FILLING: ) soak the soy granules in hot vegetable stock/water. Do not squeeze the moisture out. ) heat gm of oil in a pan and add onion(chopped), garlic and all the vegetables and sauté on medium high heat for mins or till Vegas are little browned and soft. ) add the soaked soya in the pan and sauté for mins. It will stick to pan a little bit but don’t worry ) puree the tomato with the flour and ml of water and pour in the pan. Let it cook for mins. Keep on stirring lightly so that nothing burns. ) add soy sauce, dried herbs, salt, chilli powder, and black pepper mix well and adjust the seasoning FOR POTATO MASH: ) mash the potato add the milk. olive oil, garlic, salt and a couple sprinkles ground pepper. Mix it all up until everything is even (should no longer have any lumps). Assembling: )Preheat oven/ air fryer to °F (°C). ) use a dish that’s safe for the oven/ air fryer;Spoon the pie filling onto the bottom and even it out with a spoon. Spoon the potato mash on top and even it out with a spoon as well. ) Use a fork to make some little lines on top (optional, just to make it look all fancy and pretty) ) Bake in the oven for about minutes, then turn the oven to broil for about minutes to help the top brown a little faster.
