Potatoes - 100 gm
Onion - 100 gm
Capsicum - 100 gm
Tomatoes - 50 gm
Oil - 10gm
Chilly
Pepper Powder

Garlic - Optional
Finely Chop the Onions, chilly and Tomatoes.(Garlic is optional)
Thinly sliced the potato and capsicum.
Beat eggs with salt and pepper.
Heat the pan and fry the Potato, when they look about cooked add the onions and stir till they are cooked.(If you choose to add garlic you can add in this step).
Add the tomato and capsicum and stir for a while.
Transfer the contents to the bowl of eggs and gently mix it.
Pour a little oil on the pan and once the oil is hot pour the mixture into it and close the pan with a lid and let it sit on low flame till the base becomes golden brown.
Flip and let the other side cook as well.
