Vegetable stuffing . Grate raw papaya, cheese. Mix them together with a little bit of besan and masalas like jeera , corainder powder. Add some chilli if you like it spicy. I do :) Green chutney . In a grinder make a thick green chutney with coriander and mint leaves. Fresh is the best and keeps you away from the sneaky sugars Roti . Make roti the usual way. I used the khapli atta for gluten issues. Plan on making rotis The final assembly . Apply green chutney on the rotis on the inside. . Next add the grated vegetables & cheese. This can be done in couple of layers. . Cook the assembled roti sandwich (quesadilla) on low heat and cover it. Monitor to avoid the rotis becoming too hard. . Garnish with some grated cheese and mint on top. . Serve to the Fittr family
