Penne pasta 45 gms
Prawns 100 gms
Assorted vegetables like French beans, carrot, cauliflower, zucchini, 125 gms
Onion 30gms
Tomato 75 gms
Garlic 2-3 flakes
Water as needed for the sauce
Lemon (optional)
Olive oil 5 gm
Boil the pasta with little salt and drain when done And keep aside (add - drops of oil when hot to prevent it sticking together) . Meanwhile clean, devein and marinate the prawns with little salt . Prep the vegetables and cut in ½ inch cubes . Grind the tomatoes into a purée . In a non stick pan add finely chopped garlic and sauté for secs. Add finely chopped onion and sauté for a minute. Add the tomato purée and allow to cook till raw small disappears. Add the vegetables and some water (if needed) cover and cook for a while till done. Then add prawns and cook. Add spices to taste- salt, pepper, peri peri or red chilli. . Add the pasta to the prawn and tomato sauce and give a toss. Adjust seasoning. Add lemon (optional) . Serve hot. Enjoy
