First we need to make chenna from milk. Boil the milk till it's in Nazar hati durghatna ghati type situation and switch off the flame.
Add lil lil bit of vinegar and keep stiring. After adding lil bit of vinegar you need to give the milk time to curdle. So keep stiring.
Very quick the chenna will come separately and yellowish water will be seperated. Now strain out the chenna from that water. Keep it cool down till you can touch it.
Take a kitchen cloth or very thin cotton cloth. Take a bowl. Place a strainer. Place the cloth. Then add the chenna on it.
Add some water and wash the chenna so that it can get rid of excess vinegar. Once it's done try to squeeze out the water from it as much as possible.
When it's done, add the chenna in a mized grinder bowl and make a paste out of it. Do not add any water.
When the chenna has turned into a smooth paste, take it out and knead it for - mins. It'll form a smooth chenna dough. If you keep too much water it won't form a dough.
If by chance you got into that situation then add lil bit of maida with the dough and knead it very well. (add this extra calories too)
Now make smll small balls out of that dough. I made the chenna balls each of gm weight. Means gm chenna/paneer for calculating the macros of each rosogolla.
Now take a kadai type cooking accessory and add a lot of water in it till it's full. Add - cardamoms and boil it in high flame.
When the water gets hot then add the chenna balls in it and cover it. Cook the chenna balls for at least mins.
Then remove the cover and check them. If the water gets less then add more hot water in it. You'll notice the chenna balls getting bigger in size a d becoming rosogolla.
Cover it again and cook it for at least mins. Check in middle for the water level. If you feel like you need to cook the rosogolla more then you can.
the rosogollas cool down lil bit. Take a bowl and lil bit of water. Add stevia as per your sweet requirment. Do not take too much water. This is the sweet water that the rosogollas are gonna soak.
Heat up the bowl till water starts boiling. Now squeeze out the water of the rosogollas gently and add the rosogollas in the boiling sweet water one by one so that it can soak it. That's it. It's done.
