Greek yogurt- 30 gms
Lemon Juice- 10 ml
Dried oregano- 2.5 gms
Garlic- 20 gms
Eggplant, peeled and cut into 8 to 10 thin slices 150 gms
Onion 50 gms
Olive oil- 2.5 ml
Tomatoes- 100 gms
4 slices bread
In a small bowl, mix the yogurt, lemon juice, oregano, salt, and garlic, and set aside, allowing the mixture to marinate while you prepare the vegetables.
Preheat an indoor or outdoor grill to medium heat.
Brush the eggplant and onion slices with oil and grill for to minutes on each side, until the onions and eggplant are softened. You can also toast the bread on the grill if desired. Toward the end of cooking, add the tomato slices and grill for only about minute, being sure not to overcook. Remove all the vegetables from the grill.
Divide the grilled vegetables and layer the eggplant, onion, and tomato onto each of two bread slices. Spread the dressing onto the two top slices before assembling the sandwiches. Cut in half.
