Potatoes - 200 g
Curry leaves - handful
Oil - 10 g
Mustard seeds (Rai) - 1/2 tsp , Cumin seeds (Jeera) - 1/2 tsp, Garlic - 3 cloves grated
Salt to taste
Red chilli powder, Amchur powder, Chaat masala, Dried red chilli
Boil the potatoes in a pressure cooker with salt for about - mins, they shouldn't be overdone, a little firm & cooked till inside.
Let them cool slightly & peel them. Chop them into smaller pieces if the potatoes are big.
In a vessel, take oil, add grated garlic to it & fry lightly for a minute on medium flame, add mustard seeds, jeera & fry till they crackle.
Add dried red chilli, curry leaves & fry for a minute or . Turn off the heat, add / tsp red chilli powder, / tsp Amchur powder, / tsp chaat masala, / tsp salt (add more after tasting).
If the masala is too dry, add some water (like a tbsp or so) to get a thick paste. Add the potatoes to this & mix them around gently (so they don't break) but well.
Taste the dish & adjust the spices accordingly. Enjoy the lovely tasting potatoes!
