Ingredients

Chicken breast- 600gm Basmati rice (soaked) - 300gm Ginger garlic paste- 12 teaspoon Coriander leaves - handful Onion - 100gm Curry leaves - 10-11 leave Spices:- Coriander seeds - 2 tablespoon Dried chilli - 5 Bay leaves - 2 Black pepper -3-4 pieces Dry roast the above mentioned spices and make a fine powder and keep aside.

Method

Step 1

Chicken breast- gm Basmati rice (soaked) - gm Ginger garlic paste- teaspoon Coriander leaves - handful Onion - gm Curry leaves - - leave Spices:- Coriander seeds - tablespoon Dried chilli - Bay leaves - Black pepper -- pieces Dry roast the above mentioned spices and make a fine powder and keep aside. Recipe :- Heat up a pan and tablespoon of ghee. Add the onions & curry leaves andfry them up in high flame for minutes. Once the onion changes color and becomes fried properly , add ginger garlic paste and a pinch of salt. Give it a stir.Lower the heat to medium high and cover the lid and cook. Once the masala is cooked properly add the chicken. Give it a mix. Sprinkle salt and cover it up and cook. Keep the flame medium high. Cook the chicken for minutes and give it a occasional stir. Once the oil reaches top , add the spice mix and give it a good mix.

Step 2

Add some Kashmiri red chilli powder, a pinch of garam masala, turmeric powder and mix. Add little water and cook it for another minutes. At this stage dhaniya fried chicken is ready. You can eat with roti or rice. Next step is to layer it up for the biriyani. Biriyani recipe:- Take a pot and take ml of water. Mix teaspoon is salt and teaspoon of sugar. Let the water boil. In the mean time in a bowl take bay leaves, - peppercorns, - clove, dried chilli, - cardamom, cinnamon stick, badi elaichi, half leaf of javitri and teaspoon of shahi jeers. Once the water starts to boil add the whole spices in the water and add tablespoon of vinegar and tablespoon of kewra water. Cover the pot and boil for around minutes. Add the pre soaked rice in to the pot and cook it for minutes. After minutes , strain out the rice and keep it aside.Put a layer of chicken in the bottom of the pan. Now very gently layer some rice on top of the chicken. Sprinkle some garam masala, some lemon juice, chopped coriander and mint leaves and fried onions( I used raft made fried onions).Repeat the same and put the pan on a very low heat for minutes and it’s ready.
