Ingredients for Zucchini Fritters
- › 2 medium Zucchini, coarsely grated
- › 1/2 onion, finely diced
- › 1 egg, beaten
- › 75g wholemeal flour
- › Salt & Pepper to taste
- › Topping: 100g Greek yoghurt
- › Topping: 1 Spring onion, sliced
Method
1. Combine main ingredients in a bowl & mix well
2. Put a frypan on medium heat & lightly spray with oil
3. Drop spoonfuls of mixture onto frypan & press down to form pancakes
4. Cook on both sides until browned & cooked through
5. Plate up & serve with Greek yoghurt & sliced spring onion
