WeetBix Breakfast Bliss Balls
- 100gm Almonds
- 4 Weetbix
- 1 large ripe banana, chopped.
- 200gms fresh medjool dates, pitted, chopped.
- 1 teaspoon vanilla extract
- 5 tablespoons desiccated coconut
Process the almonds in a food processor until finely chopped. Add weetbix, banana, date, vanilla and 2 tablespoons of the coconut. Process until combined. Roll heaped tablespoons of the mixture into Balls. Spread remaining coconut on a plate and roll balls lightly in coconut to coat. Store in airtight container in the fridge for up to 3 days. makes 20 Balls.
