Ingredients for Tom Kha Gai (Thai Vegan Soup)
- › 1. Thai ingredients like lemongrass, kefir lime, shallots, ginger, galangal root
- › Soy tofu 100 gm
- › Mushroom, eggplant used as veggies
- › Coconut oil 5 gm
- › Lemon to taste
- › Vegan Fish sauce 10 gm
- › Brown sugar 5 gm
- › Coconut milk 50 gm
Method
1. Saute shallot in a little oil over medium heat.
2. Add a paste of ginger, lemongrass, lime leaves, Thai basil and galalagal
3. Add tofu
4. Stir in the coconut milk, fish sauce, chilies, and salt and bring to a gentle simmer.
5. Squeeze lime and serve hot with or without Rice
