Tom Kha Gai (Thai Vegan Soup)
- 1. Thai ingredients like lemongrass, kefir lime, shallots, ginger, galangal root
- Soy tofu 100 gm
- Mushroom, eggplant used as veggies
- Coconut oil 5 gm
- Lemon to taste
- Vegan Fish sauce 10 gm
- Brown sugar 5 gm
- Coconut milk 50 gm
Saute shallot in a little oil over medium heat.
Add a paste of ginger, lemongrass, lime leaves, Thai basil and galalagal
Stir in the coconut milk, fish sauce, chilies, and salt and bring to a gentle simmer.
Squeeze lime and serve hot with or without Rice
