Thai shrimp 🍤 yellow curry
- Shrimp 300gm
- cauliflower, green beans, capsicum, broccoli, courgette , onion (25gms each)
- 4 lemon leaves for flavour
- 10gm ghee/oil
- Coconut powder 25gm
- Thai yellow curry paste 1 tbsp
- Sweet basil leaves for garnishing
Clean prawns and keep ready . Wash & chop veggies in bite size pieces & keep ready . Put the ghee in the cooking pan & heat . Add the shrimps & and sauté for 1 min then add all the veggies & sauté for 5 min . Add the Thai yellow curry paste and lemon leaves and mix well with the veggies & shrimp . Then add a bit of water fir gravy , put the fire on low , cover the pan and cook till all veggies have been cooked ( please see that you don’t over cook the veggies, they should not lose form). At the end check for salt & add the coconut powder to the gravy to thicken & bring out the flavours. Garnish with chopped sweet basil leaves & serve hot .
Tastes best with steamed rice with a splash of lime juice . Serves 2 to 3 people easily.
