Ingredients for Thai Noodle Soup with Tofu
- › Oil 5gm
- › Readymade Thai curry paste or homemade paste of 1/2 onion, 1/2 green chillies, 1/4 bunch coriander leaves, lemongrass one stalk, 1/4 inch ginger or galangal, 1 pod garlic, ground cumin and salt)
- › Finely chopped Mix veggies (Carrot/ Broccoli/, mushroom,/Soring onion) 100
- › Hakka Noodles 20 gm or rice 20 gm
- › Tofu 85 gm
Method
1. Sauté spring onions along with the mix veggies.
2. Add a small quantity of Thai curry paste. If you do not have Thai curry paste prepare a paste of above mentioned Thai curry paste ingredients ,
3. Add the Hakka noodles.
4. Simmer for 5-10 minutes till noodles are soft and the soup is lightly thickened.
5. Add fresh silken tofu.
6. Enjoy hot.
