Sweet Potato Bacon Cakes
- 450 gms boiled or steamed sweet potato
- 100 gms bacon diced
- 3 shallots (spring onions)
- I egg
- Salt and cracked black pepper
Boil or steam peeled sweet potato until tender. Place in large mixing bowl and mash.
Spray frying pan with oil of choice and lightly sauté bacon and shallots. Add to sweet potato and mix to combine.
Finally, add egg, and season with salt and pepper to taste, and mix.
Divide sweet potato mix into 4. Shallow fry in oil of your choice until crispy on the outside but soft in the middle. Sit on absorbent paper towel if necessary after cooking to soak off any excess oil.
