Ingredients

Kale, stems removed, chopped: 125 gm

Fresh spinach leaves: 60 gm

Extra-virgin olive oil: 7-8 ml

Lemon juice: 2 tbspn

Salt and ground black pepper: To taste

Hard-boiled eggs, peeled and quartered: 3 no.

Avocado, peeled, pitted, and sliced: 150 gm

Red onion, sliced: 35 gm

Parmesan cheese, grated: 15 gm

Method

Step 1

In a large bowl, add kale, spinach, olive oil, lemon juice, salt, and pepper.

Step 2

Toss to combine, coating the greens with dressing.

Step 3

Divide the salad between plates.

Step 4

Top each bed of greens with eggs, avocados, and red onion.

Step 5

Sprinkle each salad with cheese and serve immediately.
