How to make Spinach Egg Cheese Poha

Step-1

Heat the olive oil in a thick bottomed pan. Add rai seeds. When the seeds splutter, add curry leaves. Add turmeric powder and chilli powder. Add raw, chopped spinach. Lower the flame, cover with a lid and let cook for a while. When the spinach is soft, add multigrain bread mashed into crumbs. Add salt to taste. Add garam masala. Sauté for a while before adding the two eggs. The mix becomes a bit squishy now, so make sure to cook on high flame now for few mins, scraping the bottom of the pan continuously to avoid egg mix sticking to it. After few mins, the poha becomes crunchy. Squeeze in a few drops of lemon juice if you want. Add cheese grated to a garnish. Top it up with chilli flakes for added flavour.
