spinach and mushroom omelette
- Eggs 2
- Toast 1 (20 grams )
- Mushrooms 4 pcs (20 grams )
- Spinach 1 cup (100 grams )
- Oil 10 ml
- Salt n pepper
Slice mushrooms and chop spinach, take 1/2 of the mushrooms and half of the spinach for sauté
Heat 5 ml olive oil in a pan , add the half mushrooms and spinach and sauté it for a minute on high flame .
Now break 2 whole eggs in a bowl , add the sautéed veggies and salt and pepper and whisk everything well
Now in the same pan add another 5 ml of oil , and poure the egg mixture. Now arrange the the other half of spinach and mushrooms. Cover and cook for 2 minutes on medium flame and then flip and cook the vegetable side .
Serve hot with a slice of toast
