Spinach & Egg Delight!
- Multigrain bread 40gm
- Whole egg 2 pc
- Spinach, finely chopped 100 gm
- Salt to taste Oregano, Chilli flakes
- Olive oil 5ml
Whisk the two eggs well in a wide bowl.
Add 50gm of spinach and mix well.
Add salt to taste.
Heat up the olive oil in a flat bottomed pan.
Dunk the bread (you can cut into smaller slices) into the egg mix and shallow fry in the oil from both sides.
Once the bread is done, add the remaining spinach to the leftover egg mix.
Sauté in the pan till spinach is crisp and egg is well cooked.
Add oregano and chilli flakes from the top.
